Comprehensive Lipid Profile of ‘Maraština’ Grape Skins from Dalmatia

Lipids are a diverse group of organic compounds that serve essential roles due to their biological functions for all prokaryotic and eukaryotic organisms. Despite the fundamental role lipid class in plants, there is still relatively low level knowledge regarding composition grape lipids. This research represents first investigation into lipids Croatian variety ‘Maraština’ (Vitis vinifera L.), employing targeted approach UHPLC-MS/MS method conduct comprehensive analysis profile skins. The study investigated free fatty acids, glycerolipids, glycerophospholipids, triterpenoids, sphingolipids, acid esters eleven vineyards located along cultivation area (Dalmatia, Croatia). Grape skins from were exposed more sunlight higher daily temperature during vegetation period mainly resulted richer acids. Among lipids, characterized by triterpenoid compound; oleanolic (249.49 µg/g FW), especially palmitic C16:0 (26.09 lignoceric C24:0 (12.40 FW). Hierarchical clustering represented valuable insights diversity skin.
